Sweet Broccoli Salad

Sweet Broccoli Salad


Ingredients:
1 T. red wine vinegar (raw, unfiltered - find it at Whole Foods)
3 T. unfiltered raw honey or pure organic maple syrup
2 T. mayonnaise (be careful not to buy mayo with bad oil - click here for a list of good and bad oils - then scroll down the page to the bottom of the Real Food post)
4 T. real sour cream (organic from grass-fed cows)
1 large bunch of broccoli, cut into small florets
1/3 c. grated carrots
6 slices of bacon, cooked and coarsely chopped
1/4 small red onion, thinly sliced
1 T. raisins or dried cranberries

Directions: 
1. Pour red wine into a small saucepan and bring to a simmer. 

2. Add honey or maple syrup. Stir constantly until mixture has a slightly syrupy consistency, about 2 minutes. 

3. Remove from heat and let cool. 

4. In a small bowl, mix mayonnaise and sour cream. Stir in syrup mixture. 

5. In a large salad bowl, toss remaining ingredients. 

6. Stir in mayonnaise mixture. Makes 4-6 servings.

Jesus Christ has been my Savior for 47 years. Robert, the wonderful man that God provided to love me has been my husband for 45 of those years. We have five grown children, with children of their own. Of course, that means that we have grandchildren - 10 to be exact, and five great-granddaughters with another great-grandbaby on the way. I have been a stay-at-home mom, sometimes helping to supplement the income from within the home. Now I am a stay-at-home grandmother. Jesus Christ has been my guide and keeper and I have found, in all the trials, heartbreaks and good times that He just keeps getting sweeter and sweeter as the years roll by. My future is secure and I look forward to eternity in the presence of my Creator, Redeemer and King.
