Smashed Red Potatoes

Smashed Red Potatoes


Ingredients:
2 lbs. red potatoes*
filtered water
4 T. soft butter*
1/2 c. heavy whipping cream*
real salt
freshly ground pepper
Fresh chives or green onions, diced
Several pats of butter

Directions: 
1. Wash and cut potatoes (do not peel) into 1 1/2-inch cubes. 

2. Place in a large saucepan and cover with filtered water. 

3. Bring to boil; reduce heat to medium and cook potatoes until they are tender when pierced with a fork. 

4. Drain water off of potatoes (save potato water for gravy if desired). 

5. Smash potatoes slightly with a potato masher. 

6. Add butter and let melt into potatoes. 

7. Add cream, salt and pepper to taste. 

8. Smash with a potato masher just until potatoes are creamy but still have chunks of potato remaining.

9. Transfer potatoes to a serving bowl. 

10. If desired, lay several pats of butter on top of the potatoes and add a sprinkling of chives or green onions.

Serves 6.

Jesus Christ has been my Savior for 47 years. Robert, the wonderful man that God provided to love me has been my husband for 45 of those years. We have five grown children, with children of their own. Of course, that means that we have grandchildren - 10 to be exact, and five great-granddaughters with another great-grandbaby on the way. I have been a stay-at-home mom, sometimes helping to supplement the income from within the home. Now I am a stay-at-home grandmother. Jesus Christ has been my guide and keeper and I have found, in all the trials, heartbreaks and good times that He just keeps getting sweeter and sweeter as the years roll by. My future is secure and I look forward to eternity in the presence of my Creator, Redeemer and King.
